Summertime Halloumi + Peach Caprese Salad
I'm not sure when I started realising that I really loved cheese.
I was definitely late to the party as it's not always been my thing. Anyway, I've been eating more and more classy cheese over the last 10 years or so and Manchego, Comte + Halloumi are my favourites.
When it comes to halloumi (or any cheese), always buy the best you can find. And for this recipe, don't make it out of peach season unless you buy the overpriced ones from Natoora etc.
The peaches you want to use must still have a teeny bite in them but not be difficult to slice. If they’re too soft they’ll just mush up, if they’re too hard it won’t taste that great.
Serves 1-3
As a starter or as part of a main
INGREDIENTS
1 block of halloumi, cut into chunky slices
1 perfectly ripe peach, sliced
2 tbsp of runny honey
2 tbsp of dukkah or toasted chopped pistachios
Fresh mint or basil leaves
METHOD
Ideally you’ll need a griddle pan, you can use a very hot pan or grill but the results won't be as good.
• Heat the griddle pan until it’s very hot and make sure the pan is seasoned and clean. You can drizzle with a little oil if you want to
• Lightly griddle the peach on both sides, if you’re making a larger salad you may need to do this in batches
• Carefully place these on a plate
• Cook the cheese in the same pan for no more than a minute a side or it will be over cooked
• Arrange the griddled cheese + peaches on a serving plate
• Drizzle with the honey, nuts or dukkah + finally the fresh herbs
• Eat immediately
You can also skewer the halloumi + peach and cook on the bbq for a perfect light and quick veggie option
